Is it possiable to save pollen from zucchini. reason being is that I have a small garden to work with and only need one plant , however the plant doesent always have a male flower out when a female is open and vice-verca thus making manual pollination a little difficult

You can save pollen from any flower. You just want to keep it dry and one flower usually has very little pollen so, I would find someone who grows a lot of zucchini and go around and collect a bunch of it just to ensure that you have easy access to the pollen in the summer.
Of course, you may fun into the problem that you plant might only produce male flowers but generally a plant will produce both.
