Doesn't seem impatient to me at all, seems like you waited a really long time. NJ has a pretty similar climate to mine (I know because one of our moderators, applestar, is in NJ and we've been sharing gardening info here for years). It looks like all of NJ has average last frost dates in April:

I start peppers indoors end of Jan (hot peppers) or first week in Feb (bell peppers). They are slow growing.
Spinach I usually just direct seed in the ground as soon as the ground can be worked, but this year I did start a little inside in mid Jan. Those plants will go in the ground probably next weekend, along with some seed. It is very frost tolerant.
