lavender chocolate brownies recipe

These are wonderful! Below is my recipe. I started with a recipe I found on line, but modified it significantly (like half as much walnuts and SIX times as much lavender!, and leaving out some other seasonings):

Ingredients:

2 C granulated sugar
1 TBSP dried lavender
8 oz good quality bittersweet chocolate, broken up
2 sticks unsalted butter
1/4 tsp salt
1 tsp vanilla
4 large eggs, beaten
1 C all-purpose flour
1 C chopped walnuts

Melt the butter and chocolate together on very low heat, stirring occasionally.

In food processor (or blender which is all I have) pulse the sugar and lavender together until well blended.

Beat the eggs lightly, then beat in the lavender sugar and vanilla.

When the egg mixture is smooth, sprinkle the flour on top and beat it in.

Once the mixture is smooth, slowly pour in the melted butter and chocolate, mixing as you pour.

Mix just until everything is blended. Stir in the chopped walnuts.

Pour into greased 9X9 pan and bake for half an hour or until toothpick comes out clean.

Allow to completely cool for at least an hour before slicing.

Sprinkle the tops lightly with a little extra lavender sugar.

Enjoy!

Actually by the time these were baked and cooled, they still had only a hint of lavender. The original recipe called for 1/4 tsp of lavender (!). What good is that, you'd need a magnifying glass. I made this with 60% cacao Girardelli Square bittersweet chocolate. The chocolate is so intense, it kind of overwhelms any other flavor. When I make it again, I think I will reduce the chocolate just a little bit and increase the lavender a little more. They were great brownies the way I made it above, but if you didn't tell someone they were lavender, they might miss it.

These sound amazing, if you come up with a better ratio where you can taste the lavender please share it! I'll definitely be making these :)

Lavender I grew. Dry it, then grind it up with the sugar.
