mashed Jerusalem artichokes and potatoes

1 med onion, peeled and chopped
2 cloves garlic, peeled and minced
1-2 Tbsp vegetable oil
1 lb Jerusalem artichokes, scrubbed and cut into chunks
1 lb potatoes, peeled and cut into chunks
1 tsp salt
1/3 C non-fat milk powder
1-2 Tbsp butter

In a large pot, saute onion and garlic in a little oil until onions are limp
Stir in the J.A.'s and potatoes and saute briefly
Add just enough water to cover and salt
Bring to a boil, then simmer until veggies are tender, 15 - 20 min
Drain, reserving cooking liquid
Add the milk powder to the cooking liquid
Mash the veggies adding cooking liquid/ milk a little at a time, as needed to make the veggies mash easily and fluff up
Stir in butter
Season to taste with salt and pepper
