Pruning fruit trees

I have 3 fruit trees that I would like to prune. I have read advice to prune after harvesting ( late summer ) or during late winter. I am confused. When is the best time to prune in zone 3?

What fruit trees are you growing and are they mature fruit trees or newly planted?

The best time to prune trees is when they have gone dormant. What is best is to achieve as much sunlight that reaches the fruit. Therefore, prune any branches that cross one another, allowing sunlight to reach the lower branches.
