Do I need to wait before inoculating green wood?

I bought an oyster mushroom kit earlier this year and haven't had time to get wood together to inoculate some logs. Now it's about to frost, so I want to do it soon because I'm afraid that the spawn is getting old (it's been in my fridge forever). Rather than cutting a bunch of bolts, I think I would like to fell a larger tree in an area near our cottage and leave it in the woods. That way, I can go and collect mushrooms while out on my walks.

If I fell the tree, can I inoculate it right away, or do I need to wait a few weeks to allow the green wood to... do something. I think I've heard that you should wait 1-2 weeks to allow some of the enzymes (or something?) to break down a bit, but I don't know if it really matters. I mostly want to use as much of the spawn as I can and get it out of the fridge (and get some mushrooms growing), and and not worried about maximizing production.
