Pepper plants do sometimes develop striped stems. So in and of itself, I don’t think it’s a concern.

I think yours might be a bit dehydrated though. I think the stems tend to be more plump when evenly watered. It’s possible the striping might be result of alternating dry and watered?

Yeah maybe...
I killed basically every plant I ever had by over watering it, and so far this is the only plant that ever survived. I am so afraid to over water it that maybe I am not watering it enough.
This plant is really my baby, had it for almost a year now. oof...I'm just not very good with it :(
