How to Overwinter Peppers?

I read through the thread "Why bring peppers indoors for the Winter". But I'm not real clear on how to actually do this. So, here's what I think I gleaned from the thread:
1. Stick with chile style peppers not sweet peppers. (I'm going to try to overwinter a ghost, a serrano, a cayenne, and a jalapeno)
2. Near season's end pull up the plant by the roots.
3. Severely prune the roots and branches.
4. Place in pot, with potting soil, maybe 1/2 gallon?
5. Bring indoors til spring. (actually in AZ, I can probably set them out on some days if I want)
6. Keep moist as needed I guess
7. Replant into garden next spring?
