Bolivian Rainbow

Here's my Bolivian Rainbow pepper.
(I know, I really should have moved it away from the pineapple behind it :roll:)

Mine seem to have narrower, pointier fruits than some pictures of this variety I've seen on the net. My understanding is that these crazy peppers will now start turning cream, yellow, orange, and red?

Hi, It's been a few days, have the peppers started to change colors yet?

Yep! First few are turning cream 8)

Another update -- it's changing color enough to be more obvious I think:

I wonder if they would retain the purple color of the immature fruits if I try to can them or pickle them.

I suppose the vinegar could change their color and heat/cooking may turn them green....

If it can stay purple, I would definitely consider finally getting a pressure canner and preserving them in brine.... I might anyway because I want to try to brine preserve my peppadews. Wouldn't it look wild if these dray purple and were put in a jar with the lacquer red peppadews? Maybe some bright yellow Hot Lemon Drops too?
