When should a Hungarian Yellow wax pepper be picked?

I read that Hungarian Yellow Wax peppers turn red when they are ripe off the vine, but I could not find information on when they are prime to be picked. My peppers have gone from dark green to a light yellow as of now. The picture that came with the seedlings shows them as being dark yellow. What color should they be when I pick them off the vine?

I've grown these a lot and when they're truly ripe (best flavour) is when they're red. In my personal experience, it's a bit of a Catch22 situation, while allowing them to ripen enhances flavour, it often results in a smaller harvest. Whereas frequent harvesting increases the production of fruit, with slightly less flavour. If you've got a couple of plants allow one to mature and the harvest from the other.

That's a good tip. Pepper seem to tend to concentrate on maturing the existing fruit and stop producing.
