I saw a plant on the DIY channel. It was being planted in New Orleans. It somewhat resembled a hosta, but was red, white, and green. It was 2 to 3 feet wide. It had a tropical look to it. I missed what they called it, but it definitely began with an S.
Any ideas on the full name?

That is all I had.... I saw it on TV for about 5 seconds. And it definitely begins with an "S". Oh, one other thing.... I didn't see flowers on the plant, and the leaves were about 4" wide, and maybe 12 - 16" long. The leaves are lone and green with red and white stripes mostly running the length of the leaf..... Your description is very broad. It would fit the description of a ti plant called Hawaiian flag. It has red white and green leaves and while ti does have flowers, it is grown primarily for its' leaves.
