I know it is common to remove the anthers from a Lily because of the staining issue. I have read that it also prolongs the bloom. Should the entire stamen be removed or just the anther?
Does this apply to all flowers? Such as Torenia and Alstroemeria?

Sorry your post got missed and never got a response, so here's a very belated one!
I have never done it, but I would guess easiest is to remove the whole stamen.
Most flowers are just deadhead-ed. Remove the whole flower, including the base where seeds would be produced, when it is spent, wited. The alstroemeria will keep blooming much longer if you do this.
The torenia is one of a group of flowers like impatiens that are called "self-cleaning" that don't need deadheading or anything.
