deadhead stock vintage blooms?

Hi all,
I have several colors of 'stock vintage' flowers. They looked beautiful at first, but are now a little ratty looking. Should I trim stems that no longer have blooms? If so, where is the best place to cut? Also will they bloom all summer, or will the New Mexico heat get to them? We get temps in the high 90's on a regular basis from late June on.
