Happy New Year, coykiesaol. The answers to your questions are... it depends. You do not display the necessary geographical info besides your name but the answer depends on where do you live and what your USDA Zone is. I will give you some general pointers.
Blue Moon is not very winter hardy and will require some protection in zones 7 and colder. If you live in zone 8 or warmer, just add mulch and water it every other week or so during dry winters.
In colder locales, you could do several things. One is to prune it back to around 12-24" and cover it with hay/straw, compost, leaves (but pack them tight). Leaves work well in warmer cold zones; I would recommend hay/straw in very cold zones like 5 or colder. At this time of the year, you may no longer have available leaves so consider buying hay/straw instead. Then use chicken wire to make sure all that material does not fly South when the winter winds blow thru. Unused material can be stored somewhere as you may need to reapply it again in midwinter due to settling. There are other methods; a jillion if you count minor variations here and there. For example, in some places where wind is a problem, some persons tie together the canes so they do not wip around when the winter winds blow thru.
If you are growing it in a pot, store it in an unheated garage during winter but remember to water it every now and then.
How tall does it get? Your geographical location also affects how tall the plant gets. The longer your growing season is, the taller the shrub can get. A range of 2-5' would give you a general idea. 5' tall applies in places such as the Southeast and 2' tall applies to some states with cold zones along the border with Canada.
