Pruning a climbing Noisette Rose

In May of this year I planted a Mme Alfred Carriere with the intention of limiting its size to around 10ft. It is doing ok and has had a few decent blooms. I have a rose guide which recommends pruning any lateral stems to no more than 5 or 6 eyes to encourage the rose to flower from each leaf axis. I can identify the leaf axis, but have no idea what the eye is.
Can anyone explain this term?

I noticed that your question hadn't received any responses. I don't know a lot about roses; I just have a few miniatures in containers. However, if you go to Google, then click on 'Videos' at the top of the main search page, then enter the words prune climbing rose into the search box on the video page, you will find links to several videos that demonstrate how it's done.
