Is this Amaranth?

This was planted randomly by my old neighbor because he thought it was pretty...so I'm wondering if I should snag some seed from this and grow yself to use as another sourceof food?

Yes, that is red amaranth. Scatter a few seeds on the ground in the spring and it grows like a weed. It is a close relative of the common pig weed.
