starting plants for winter harvest

I have a newly constructed 'greenhouse' (more like an unheated polytunnel) and I can't wait to start gardening in it! I live in southwestern Ontario in Canada - about zone 4. I'm hoping to extend my season on hot lovers like tomatoes, peppers, eggplant and melons (although I'm a bit too late getting started this season). The other use I would like for it is to grow some cold weather lovers for winter harvest. I have planted lots of seeds for lettuce, spinach, kale, turnip, kohl rabi, cabbage, radish, etc. to give them enough time to grow to harvestable size before the cold weather sets in. However, I read that it may be too hot in the polytunnel in August to grow these successfully. it's only been a week, but most seeds have sprouted. I have also started similar seeds indoors and will raise them under grow lights for transplant in September. What is the proper way to deal with growing in this environment for successful winter harvest? Thanks for your advice!
