Melons....

Due to our short season staring melons in the house is a must. But I have a few questions.
I started them in larger containers to begin with, so will they still need up-potting?
I know their roots don't like to be disturbed, but is it possible, if all 3 seedlings come up, to separate them out so I have 3 of each plant?
I really, I mean REALLY don't have room to start any more individual plants. I can make room once their up potted on the shelves but I'm already breaking down and buying my peppers because I have too many flowers and tomatoes, now the melons, plus some onions. We're talking 4 trays of plants....as seeds. I have a 3 yr old and a cat to keep out of them too!
And as it is I'll need another grow light >.<
