starting tomatoes from seeds

I live in panama city Florida and I'm going to grow yellow pear tomatoes this year I'm putting them in the ground this weekend. I'm wanting to save the seeds for next year what do I need to do.

I'm sure that there are lots of techniques, but I simply scrape out seeds and goo and place them on a paper towel in a dry location inside the house. After drying for a week or so, I move them into a baggy that gets stored in the freezer.

Yellow Pear is a OP variety, so that is good.
The store bought variety maybe a F1 hybrid. Not so good.
