Marcia Vegatable Soup

Marcia Vegetable Soup

1 quart of water
1 quart tomatoes
1 large onion cut in 8 pieces
5 whole garlic cloves
10 New Mexico chili peppers or 2 large heaping tablespoons chili powder.
15 sprigs of fresh picked parsley
4 sprigs of fresh picked cilantro
4 sprigs of fresh picked mint
1 bay leaf
1 tsp cumin powder
1 tsp paprika
3 tsp salt
Boil until onions & garlic are soft about 30 minutes. Pour through strainer to remove solids then puree solids in your blender with 1 cup cold water. Return puree to the soup pot with the original liquid.

2 large chicken breast
1 quart of hominy or corn
1 quart of green beans
1 quart of carrots
1 quart of squash 1" size pieces
Bring to a boil until carrots & chicken are cooked about 30 minutes. Yummy

I used our garden, corn, green beans, tomatoes and New Mexico chili powder. This summer I will grow my own herbs so I don't have to buy them at the store. Fresh herbs give soup a very good flavor.

I like to watch TV cooking shows. 3rd world countries cook over open fire and they cook different, they don't have a microwave oven, electric oven, gas oven, blender, food processor, electric mixer, or other things we have. Food looks good I can't wait to cook it myself. I still want to make stone soup I collected several river rocks. I forgot which country Marcia is? My son just returned from a 2 week vacation in Columbia south America food pictures are very interesting they cook things I never consider like oven Bakes Bananas and fruit I rarely seen in our grocery store. Wahaka Tacos are south American they have a very interesting way of cooking, tacos turned out very different & very good.
