Deserts & Pastry

Dates at Aldi's grocery store caught my eye they are only $1.99 per lbs. 60 years ago my mother made the best Date Pudding in the world. I don't know why this is called pudding because it is like eating cake with whip cream not pudding. This morning I watched several YouTube videos until I found a recipe that looked good to me so I make it. Interesting thing about this recipe it has no sugar. Dates are sweet as candy with a ton of flavor the recipe needs no sugar. Cut dates in 1/2 soak in hot boiled water 15 minutes so they get soft then pour out water, puree dates with 1 cup of cream. Add, cinnamon, nutmeg, chipped nuts, raisins, bread crumbs, egg, other stuff, bake 1 hr. Make whip cream type topping with dates & cream too. Topping is suppose to cool in refrigerator over night so it gets thick but I wanted to eat it now not wait until tomorrow. LOL. This is very good I ate 2 pieces but not as good as Mom made. I better get over to Aldi's and buy more Dates $2 lb. More video recipes to watch later. December is date picking season in Arizona buy some while you can.

Recipe. In the 1940s people did not waste food, this recipe was traditionally made with hard stale bread. After bread is completely dry roll it with a rolling pin to make crumbs. If you have no stale bread bake 6 slices in the kitchen oven 225 degrees until dehydrated, use food processor to make bread crumbs.

Put 8 oz of Dates with no seeds in a pan of boiling water for 15 minutes to make dates very soft. Pour off the water.

1 tsp baking powder
1 egg
1 cup heavy cream
1/4 tsp salt
1 1/2 vanilla
1/2 tsp nutmeg
1 tsp cinnamon
1 stick melted butter
8 oz dates
Puree in food processor then move to a large bowl
1/3 cup chopped walnuts
1/3 cup currants or raisins
Stir in 1 cup bread crumbs until batter is thick like a cake mix.
Pour into an 8" by 10" greased pan
Bake 1 hour 350 degrees F until done.

Whip cream Topping sauce
1 cup heavy cream
2 oz dates puree into cream with food processor
1/4 tsp vanilla
1 T whisky or brandy optional
Cool over night until thick. Whip high speed to make whip cream.

Date pudding with French Vanilla ice cream is GOOD. Forget about whip cream, ice cream is better.

Looks yummy. It must be an English dessert. Strange, they do call dessert pudding.
