Red cherry peppers turn mushy

I have put red cherry peppers in a jar with vinegar and water,crushed red paper and salt and some times they come out mushy or very soft. If I use green cherry peppers, I do not get this problem. I have kept either jars over a year,it seems time does not really matter.Could you please explain why?

Once peppers turn color their shelf life is like 9 days. You may be canning them when they are overripe.

Consider making a pepper jam instead.
