I found this recipe it says stuffed peppers but we decided stuff potatoes would be much better. I love to cook so I made a slight change in the recipe that makes it much better than it would have been originally. Remove casing from 2 German Bratsworth brown meat in skillet with 1 cup chopped onion, add 1 cup chopped bell peppers, add 1 cup chopped tomatoes, add 1/4 cup red wine, add 2 tablespoons of soy sauce is better than Worcestershire sauce. Remove baked potatoes from oven cut them down the center squeeze them open, chop inside, stir in 2 large spoons of sour cream, 1 large spoon butter, sprinkle of black pepper, Chedder cheese. Top with the Bratsworth mixture.
Yum, I like topping potatoes with things. I also like to make twice backed potatoes, one way I do it is with oinion and sharp cheddar , sometimes I add bacon.
