So I just "invented" something great....

Ok, I don't suppose there is any permutation of a chicken salad that hasn't been done, but I threw together a VERY tasty meal just now and thought I'd share. Yesterday was "Mexican fiesta" around here, and we had quite a few leftovers. Here's what I put together. All of the veggies are from the garden, except the avocado and lime.

Ingredients:

left over grilled Mexican chicken breast (think fajita type flavored rub), small dice
left over roast ear of corn, cut off the cob
a handful of cherry tomatoes, halved
a little onion, small dice
a little mild pepper (cubanelle type), small dice
a dollup of leftover guac (avocado, cilantro, onion, padron pepper [hot], lime juice, salt and pepper)
a dollup of mayo
S and P to taste (didn't need much)

Mix all ingrdients well, and serve in a warm tortilla.

It was CRAZY good!

LOL it sounds like something that takes a bit of work to assemble if trying to make from scratch, but sounds really great! Love the Guac/mayo combo and roast corn cut off the cob is unexpected for chicken salad but very Southwestern (in my mind) :D
