German Chocolate Chewies

These are a "no bake" type chewy cookie. And PALEO! And they're incredibly delicious.

In a medium sauce pot, add:
1/2 cup grass fed butter or coconut oil
1 cup full fat coconut milk
1 cup pure maple syrup
1/4 teaspoon salt

Bring this to a heavy boil and reduce until 220F on a candy thermometer. In the meantime measure these into a separate bowl:
1 1/2 cups shredded unsweetened coconut
1/2 cup chopped pecans
1 tsp vanilla extract

When the caramel reaches 220F, remove from heat and stir in the coconut, nuts, and vanilla.

Drop spoonfuls onto greased (coconut oil) wax paper. Drizzle them with melted dark chocolate.

I had to freeze mine to make them set, and give them that chewy texture. It's good that they're frozen! I could very easily eat them all!
