The mint I planted as ground cover around my water garden is slowly suffocating my Buddah statue. It's not within the fabric of my being to just hack away and waste it sooooo I thought I would make some apple mint jelly using the BBB recipe sans pectin. I ended up with candy
Now that I DO NOT trust my 'know when it's gelling' ability (not that I ever had one to begin with) I want to make it easy on myself and use pectin instead.
My main ingredients are unsweetened apple juice, fresh mint, sugar and pectin but I'm in need of a tried recipe to guarantee success this time.
Help me not to waste more lovely mint!
