Birria de Res = Mexican Beef Stew

Birria de Res = Mexican Stew, Beef or Lamb, Goat meat is the best.

1 lb of stew meat in small cubes.
1 quart of water.
1 can Tomato sauce or 1 cup fresh garden Roma Tomatoes.
1 sprig of fresh Marjoram.
1 sprig of fresh Thyme.
1 beef bouillon cube.
1 large white onion sliced and diced.
Cook in a crock pot 2 - 3 hours or until beef is tender.

Sauce
1 pint of water.
1 tablespoon of chili powder.
3 very large cloves of garlic.
Bring to a boil, turn off the heat, set aside until meat is tender. Puree sauce in the blender on high speed for 3 minutes. Add sauce to the meat. Add another 1 sprig of fresh Marjoram , 1 sprig of fresh Thyme, 2 tablespoons of Worcestershire sauce.

Add 1 can of whole kernel corn and 1 can of sliced carrots. Simmer for 30 minutes. Salt and pepper to taste.

Garnish
1 cup chopped onion.
1 cup Cilantro.
1 head chopped cabbage or 1 lb bag of sole slaw cabbage.

Serve in a large bowl, put 3/4 cup of chopped cabbage in the bowl, pour stew over the top of the cabbage. Garnish with 2 - 3 tablespoons onions and Cilantro. Stir in the garnish before you eat.

Optional, squeeze a few drops of juice from 1 small slice of lime over the Garnish.

Eat while cabbage is still crispy.


Note: If you make this with dried herbs instead of fresh herbs you will be disappointed in the FLAVOR.
You can ADD or substitute, Rice, chick peas, beans, lentil's, any vegetable you like, etc.

I forgot to mention how easy this recipe is to make in a crock pot.

Put the first 7 items in the crockpot and turn it on high.

Bring the sauce to a boil then turn off the heat and let it set.

Return 3 hours later, put the sauce in the blender 3 minutes then add it to the meat.

Add the extra herbs, vegetables, etc. let it cook 30 more minutes.

Serve over chopped cabbage, garnish with onion and Cilantro.

I'm intrigued that this is served over uncooked cabbage.
I'll have to remember nd try it. Thanks.

I had 3 bowls of Birria de Res for dinner with several extra vegetables. Wow this is Goooooood.
