Coffee cake Challenge

Mon Apr 29, 2013 11:06 pm

As a child I would have the best coffee cake up in New England. It seemed different from most. For years I have been trying to find a recipe. The ones I try turn out like yellow cake box mix with a crumble topping. If you have a good one, then please share it.

My wife makes a coffee cake to die for. Lots of pecans, cinnamon and sugar. I'll post the recipe when I get it. She also makes a great breakfast cake that is delicious with either pineapple or cherry pie filling. She is locally famous for her baked goods, especially sweets.

seems there two basic types I've encountered, one is a sweet bread type of dough - basically a pastry type - the other being more cake-like.

the bread types are usually iced, the cake types with streusel.

I presume you're working on the cakish type? can you provide a bit more description?

My wife's is a Martha Stewart recipe, that my wife modified a bit. The cake itself is lightly sweet, but with lots of cinnamon and sugar baked in the middle, and crunchy cinnamon, sugar, pecan crust on top, baked in a tube pan. If you wish, I'll look the recipe up and post it.

Ah this is it, but not with the wife's alterations. Found it via Google.

1 1/2 cups coarsely chopped toasted pecans

Coarse salt

Thanks for posting the recipe. I'm sorry I didn't clarify that it was a streusel type coffee cake.

The key to this coffee cake is to have excellent pecans.

Both GoldenKernel and SunnyLand Farms have the best pecans ever. For the past several years we have ordered from SunnyLand Farms, but were always happy with GodenKernel orders as well. We buy their bulk raw pecans, large pieces. The wife bakes a lot, and uses about 15 pounds per year, which we store in the freezer.
