Grilling Poultry

I like to do beer can chicken. Nothing special but creates a nice, moist chicken. Season the inside and out of a whole chicken to your liking. Take half a can of beer and season as well. Shove the can up the cavity and use the chicken legs for stability. Indirectly grill (I prefer charcoal) until done. Devour.

I'll take a whole chicken and run my hands between the skin and meat to separate the two. I'll then take a 1/2 to 3/4 stick of real butter and let it get to room temperature so it is soft enough to work with. I'll finely chop some garlic, a bit of sweet basil and some rosemary and mix this into the butter and then put it between the skin and meat of the breast, legs and thighs. Whatever is left over goes on the outside of the chicken then I salt and pepper it to taste and place it in the center of my grill with the two outside burners lit. I put it on the grill and basically forget about it between 1 1/2 to 2 hrs. at around 275 to 300 degrees.

The indirect heat won't burn the chicken and the butter keeps it very moist.
