CUCUMBER AND MINT SOUP

CUCUMBER AND MINT SOUP

This soup is light and very refreshing and tasty and serves 4

3 large cucumbers, peeled, diced
1 cup plain yoghurt
2/3 cup light sour creme
1/2 tsp. dry mustard
1/4 cup chopped fresh mint leaves
salt, pepper to taste

Garnish with thin slices of cucumber and sprigs of fresh mint

In a blender, combine cucumber, yoghurt, sour creme, mustard and mint and blend until smooth.Add salt, pepper to taste. Transfer to bowl, cover and chill for several hours. Check flavour before serving and serve in well -chilled bowls or cups. Garnish with cucumber slices and a sprig of mint.
