BEET AND CARROT SALAD

1/4cup sweet onion diced
4-6 med. beets, peeled and shredded
3 med. carrots shredded
2Tbsp. chopped dill

Dressing:
1tsp Dijon mustard
3Tbsp.canola or sunflower oil
1tsp.toasted and ground caraway seeds
Salt and pepper to taste

Makes 6 servings
