Like Marlingardener said, it doesn't do well when frozen and I'd only use it for cooking. I'll sometimes have too many bell peppers and I'll dice them along with some onions and celery and pack it away for making stocks for soups and such.
I'll use celery when making my pickled vegetable medley of celery, carrots, onions, garlic, cauliflower, green beans and hot peppers. I'll cut things up in bite size pieces, pack them in my jars and add the hot brine. I've got a couple friends that will take all I give them when I make this.
