Stuffed Jalepenos on the GRILL!

Hello all! I wanted to share this recipe with everyone out there who likes their Jalepenos stuffed to the gills and grilled...

You will need:

About 10-15 Jalepenos
1 package of cream cheese (the kind you spread)
1 stick of Cracker Barrel cheddar cheese (chopped up)
1 pound of bacon
and a GRILL :)

Start by removing the stem of the peppers. Then make a cut length wise down one side of the pepper so that you will be able to take out the seeds without breaking the pepper. Save the meat from the pepper that you slice off because this will be used later on. Wash peppers getting all the seeds out. Next grab a bowl and put the package of cream cheese and the cheddar cheese in it and mix well. Now take the meat from the peppers that you removed earlier and chop them up nice and fine. After you are done chopping them up throw them in the bowl with the cheeses and mix well. Next... stuff the peppers with the cheese mixture. After all peppers are stuffed take your raw bacon and wrap one slice around each pepper so that the cheese mixture is covered and won't fall out when grilling. If you would like to insert a toothpick to hold the bacon in place you can do so. Next... put stuffed peppers on the grill and cook until the bacon is nice and crispy around the pepper and the cheese is oozing. Don't cook for too long or you may lose all your cheese. After they are cooked to your liking.... Next step... ENJOY!!!

Note: Cook bacon well. You don't want to eat raw bacon... YULK!!

Check it out. I own a tool, just for your recipe. I actually make them often. It's even shaped like a jalapeno. You just set it on an indirect grill. It works great. The jalapenos sit upright in the little holes. It even folds up. :D

I was going to mention something like this when I posted. I saw them in a catalog. They are pretty cool. It takes a little longer to cook thay way though and the bacon won't get crispy, but other than that they aren't bad. And the one I saw was just square shaped. I like that one though. It's different!

As long as your heat is up, the bacon crisps up. For me, it works the best on a hot indirect charcoal grill.
