Raw beet salad! Get out your grater.

The firsts year I planted beets, theygrew like mad. One day I stared at them in disbelief and said to myself, "Why did I grow beets? I hate beets!" (I blame the darn seed catalogs!!!)

Anyway, I got to thinking how most veggies taste great raw, so I guessed I might like a raw beet salad better than cooked beets. I picked an equal amount of beets, kohlrabi, and carrots, and grated them all into a slaw. Dressed with a little vinegar and oil, salt & pepper, it was DELICIOUS. Also very good with a celery seed dressing. Toss in a handful of raisins - the sweetness is delightful with the strong tasting vegetables.

The salad is also beautiful, as the beets change everything to varying shades of red/pink.

What is a good celery seed dressing mixture? Or recipe?

I make cole slaw all the time now with kohlrabi and carrots . I like your suggesion and will try adding some raw beets! I have been planting the cylinder beats and seem to have a better beet since it does not seem to get tuff and grows above the ground!
