canninc tomatoes and striing beans

Very Happy Hi my name is Sophie and I am new to the Helpful Gardener.

I am not new to gardening, but new to canning. I am planning on planting many tomatoes and string beans this year and had a couple of questions.

First of all, I have heard that you can store tomatoes in mason jars in just plain water, without doing anything to the tomatoes and just sealing jars in a water bath. Is this true?

Also, I am also planning to do the same with the string beans. This way I can still taste summer ripe tomatoes in winter.

Anyone out there ? Thanks for any help guys
