Marinara Sauce From The Garden

I make this marinara sauce with most ingredients from my garden. Easy to make with spectacular flavor depth:

Ingredients:
2 lg Onion; diced
2 tbsp Oil, Olive
6 ea Garlic, Cloves; minced
2 tbsp Herbs; basil, rosemary, oregeno, thyme
1/2 cup Wine, Red
12 Cups Tomato; peeled, seeded; fresh, extra ripe
salt and pepper to taste
1/4 cup Sugar (optional)

Instructions:
50 medium tomatoes make about 18 cups of marinara.

For the flavor base:
In stock pot, heat olive oil. Add onions (I also added carrot and pepper from the garden), cook slowly on medium heat until caramelized. They should be brown, soft.

Add the garlic and dried herbs and cook for 5 minutes.

Deglaze the pan with the 1/2 cup of red wine and cook for 2 minutes more.

Add the tomatoes and their juice, sugar and stir to combine. Bring to a simmer and cook (uncovered) on low, stirring occasionally for 2 hours.
Add salt and pepper to taste.

Taste note: add a fine diced carrot, pepper or mushroom for added flavor depth. Sautee with the onions.

For the fresh, very ripe tomatoes: (I use about 50 'mators)
Bring a pot of water to a boil.
Have ready a large bowl of iced water.
Plunge whole tomatoes in boiling water until skin starts to peel, 2 minute.
Remove with slotted spoon and place in ice bath.
Let rest until cool enough to handle, then remove skin and squeeze out seeds through a strainer to reserve the juice.
