easy summer veggie roll ups

This is super easy and refreshing for hot summer when no one has a lot of appetite and you don't want to be standing over a hot stove:

Take a large size wrap (sort of like a giant tortilla).

Place a generous band of whatever mixed greens and veggies salad is around down the center (if you don't have left over salad some crisp lettuce, sliced grape or cherry tomatoes, cucumber slices and whatever else you feel like adding would be fine).

Dress with some kind of tangy salad dressing, catalina, zesty italian or whatever you like.

Top with 2-3 T of cooked and cooled couscous.

Sprinkle with your favorite grated or crumbled cheese.

Rollup the wrap and tuck the ends under.

I ate this twice today, I liked it so much! It's a pretty complete meal, veggies, starch, protein, but light and cool.

rainbowgardener, That sounds really good. Those sort of wraps or varying a bit, are really good for meals on a hot day. :D
