Tomato bacon cheese open faced sandwich

Slice tomatoes about 1/4" thick. Lay out on paper towels to dry. Turn at least once to dry both sides.

Toast slices of bread. Stand toast on end, leaning on each other to make sure toast is thoroughly dry.

Slow fry bacon to remove most of the fat. Leave somewhat chewy.

Slice cheese about 1/8" thick. Cheeses that melt smoothly work best. Processed cheeses like Velveeta actually work great. Pre sliced cheese also works.

Assemble by putting dry tomato slices on dry toast, add salt and pepper to the tomato if desired, add bacon strips and cover with cheese. Broil on low until cheese is melted or slightly browned.

If you like tomatoes, bacon and cheese, I can guarantee you will want to make yourself at least 4 slices. I found out that I can eat 6 one night when the wife and kids bailed on dinner. I wanted to eat all 8 that I'd cooked, but I didn't want to make a pig of myself :roll:


Left over they are not too good as they get soggy, so go ahead and be a PIG! :lol:
