I like this recipe better than my old recipe because this person has exact measurements. I don't have to make 5 gallons of kraut each time. Today I make kraut with 1 small Dutch cabbage. Flavor is 100 times better than kraut made with vinegar. Also easy way to make Kimchi.

That sounds good, and sounds like the method I use for kimchi, and those mixed Chinese pickled vegetables, that are actually salted in a crock.
