Indoor Planting
Does anyone have any suggestions on what I could start from seed under grow lights that I can keep indoors once it grows up?

Depends a lot on what kind of lights and how professional your set up is. Easiest to start with is anything we eat the leaves of, rather than fruits of. That would be lettuce, spinach, swiss chard, etc. Inducing anything to fruit under lights is more complicated.
If you have experience, know how, and a good enough high energy, full spectrum light set up, and enough nutrients etc, you can grow anything you want hydroponically. I don't do that kind of growing, so I can't give more details.

What is it that you like to eat ? You can grow anything inside. I think indoor growing is amazing. You are mother nature and you have control over the enviroment. T-5 Fluorescents our awesome for indoors, they don't put out much heat and pull alot less electricity than other indoor grow lights such as HPS (High Pressure Sodium) & MH (Metal Halide). Then you have to decide weather you would like to grow hydroponically - aeroponic - or in just plain soil. I hope some of this helps. Hope you have a great weekend !!!
