I am a new gardener and I have been told that the larger zukes are not good because of the seeds. So what can I do with them? :?

The really massive ones larger than 12 inches or so aren't really good for anything except the compost pile, I think. They are too pithy and bitter once they seriously begin devloping seeds. The ones that are somewhere around 7 to 10 inches or so in length are a little bitter and begining to develop seeds, but still have edible portions. I like to use them for making zuchini bread, once they are sliced lengthwise and the seeds and center removed.

I use big ones to make stuffed zucchini "boats." Works on the same principle as Roger's bread, since you remove the middle and stuff with something else (a tomatoey based stuffing is good), then bake. You can also taste the middle part and add it to the stuffing if it isn't bitter.

Split em in half with the machete and the chickens get a snack...
