Harvesting pea seeds

Hello all, first time posting - I cannot find the information I'm looking for anywhere on the internet! My question is - do peas have to be dried on the vine to make viable seeds? I harvested a bunch of pods yesterday but some of them are older with leathery skin. They are still green, though some had already began turning brown. This is my first time gardening and figured I would just pull them all off. I have since learned that the peas I want for seeds should have been left on the vine. But since they were not will they still be viable seeds if I dry them out now?

Thanks!

First are these English peas or southern peas?

There is a point when the plant is still green and the pods have some life in them but they will be mature enough to dry for seed.

Do a Test plant some of your pea seeds to see if they grow. Go to the garden right now and plant a few seeds or plant some in pots either way you will know in a few days if they will grow.

Oh wow you can plant them right away? I will definitely give that a try.

The peas are sugar snap peas and Lincoln Homestead peas... A northern variety I guess?
