Potatoes left in ground too long?

We did not have time to harvest all of our potatoes this year, so some were left in the ground. Some of them are sprouting again, others are not. Are we ok to harvest and eat them? Will their flavor be compromised?

About Potatoes: I would not eat the ones that have sprouted, but the ones that have not sprouted should be fine.
