Gold beets white and not gold inside

Not sure what happened. 100% of my gold beets look gold on the outside but are basically white inside. Thoughts? All help appreciated.

how's the taste? what was the variety name? there are beets that that are supposed to have yellow skin and white flesh.

Has it been hot? Hot weather can cause white rings in res beets.
