How important are the roots that grow along cucumber and squash vines (not main root where seed was planted)? Do cucumbers have them?
I have raised beds and to save space I run my winter squash and pumpkin vines along the brick walkways, how bad is this? Do cucumbers grow roots out of the vines?

Yep. Just like squash cukes grow roots from every leaf node, given suitable conditions.
When I let cucumber crawl along the ground for the first time last year, I was amazed by the size of leaves and proliferating side vines. So now I let the cucumber crawl at least a bit before making it grow up the trellis.
