Caution! This from my extension service:
"There are currently no safe, tested recipes for pickling summer squash followed by
boiling water canning. There are a few pickled squash recipes that can be made,
but they must be refrigerated and, used within 7 days."
and this:
"The heat required to can squash results in the squash flesh turning into mush and sinking
to the bottom of the canning jar. The compacted flesh will not heat evenly. Therefore, all process
times and temperatures are unsafe. Winter squash varieties can be safely canned under limited
circumstances. Please see https://www.uga.edu/nchfp/how/can_04/pum ... quash.html
for science-based safe canning procedures for winter squash."
Far as I am concerned, canning of any squash is not in my plan. Pickled or not.

The title of my post CLEARLY said WINTER squash.....for anyone who was actually paying attention
I tried some just now, even though the recipe said I should wait 3 weeks (not 1) so it would be properly pickled.......it was rather CRISP and FIRM, just like the recipe I followed said!!!
I'll update everyone IF I turn up dead
Oh, and it tasted pretty good, so I'll be pickling some more WINTER squaRsh tomorrow
I think I'll throw some sweet-hot........yes that's right sweet-hot peppers in the next batch!

Pretty thin. :O Its so thin kites need 3 wings.
You are fine as long as you refrigerate squash, however, I didn't want to see anyone get hurt trying to heat preserve squash of any kind. Winter or not!
