Jerusalem artichoke

I had volunteer Jerusalem artichoke plants grow last year but I didn't harvest any tubers from them. Today, I decided to dig some up and see if they are still edible. They turned out crunchy and edible. Impressive!

Yep. Earth apples are a great thing. I have red and tan. I harvest mine as needed. Pulled some a couple days ago that were starting to grow.

Earth apples. What an unusual name.

Wikipedia said it contains inulin. And "the inulin cannot be broken down by the human digestive system, which can cause flatulence and, in some cases, gastric pain." So I've been avoiding eating too much of it.
