In my little 4 by 6 foot no dig garden I finished digging up my potatoes yesterday. I got about 30 pounds of red potatoes!!! Add this to the 10 pounds I got 2 weeks ago that's quite the bounty for 24 square feet especially since I planted them late!!
This was my first go at growing potatoes so I'll definitely have another next year!!! woooohoooo!

Feels good doesn't it digging potatoes you planted.
I am a french fry junkie and there is nothing better to me than french fries made out of potatoes that were sliced while still warm from the dirt they grew in.
Growing your own food sure give a level of personalpride that most folks sadly will never know!

Get the Ball Jar blue book it's the canners bible and it will keep you out of trouble! Botulism is nothing to play with it don't play well with others!
Water bath is the way to can high acid foods and it safe and easy.
I am very careful about cleaning my jars and making sure they are boiled longer than they say to boil them.
Canning the high acids are not as big a deal as say meat you have to have a pressure canner NOT A PRESSURE COOKER so that the meat comes up to the right temp. Canned meat is so good when you use it. I made some chicken and noodles the other day with 2 year old chicken. It was just wonderful
