peppers colors

Perhaps an odd question... Why do some colored peppers start off green and then change into their appropriate color when ripe, and others start off as their appropriate color and then you have to guess when it tastes ripe?

My hubby picked one of the yellow ones earlier and Ewww. not even close to being good! what is the difference? just a variety thing?

Don't know, but it seems odd to me that it wasn't tasting good. I just grow basic green to red bell peppers, but I pick them basically whenever I want one. Sometimes that means picking them quite small and immature. The green peppers are a bit sharper tasting and not as sweet as the ones that are left to turn red on the plant, but all of them are good....

these were yellow from the start, so they didn't taste like a green pepper... they just were bitter and gross. like they weren't going to get good until they finished ripening...?
