First Pepper Harvest!!!! with pictures

This is the day I have been waiting for for a while. I thought I had alot of peppers, but didn't think there were this many.....

I filled the jars with peppers, then filled them half way up with white vinegar.
I then added 1.5 heaping table spoons of canning salt per pint and filled it the rest of the way with hot water. put the lid on ASAP and shake.

I like cold packing because the peppers stay crispy and not mushy. With the hot water it will seal as long as you get the lid on fast. I then keep them in my refrigerator I like them cold so it works. :)

So you can do that without having to "air seal" the containers they're in? I'm going to have a bunch of jalapenos and banana's, but someone told me if I am to store them, they'll need to be in air sealed containers.

Very nice I am jealous as all get out. I can't seem to buy a pepper this year. I could take up my 10 plants and grind them all up plant, roots and what joke of tiny peppers there may be. and they might fit in your one big jar, maybe there would be a little left but I'm thinking not. :oops: :cry:

At least my tomatoes are keeping me busy, every few day's I HAVE to pick.

I put them in "Ball" jars. They have airtight lids. I do not bring them up to a boil, so I have to keep them in the fridge. They have a vacuum since I used hot water, but not much. I fill them with solution to overflowing so there is no air inside

The tomatoes in the picture are the only ones harvested so far. but the time is coming. there are a couple hundred tomatoes on the plants that are almost ready to turn!!! I need a good spaghetti sauce recipe

I would expect the next harvest to be 2 Times as big. the plants are 3 times as big as they were the last start

I am a pepper freak!!!! I have ghost peppers growing and 1 has sprouted out from under the bloom. I am so excited

I'm not quite such a fan of pickled peppers though I like them occasionally, so when I grew a lot of hot peppers a couple of years ago, I also made hot pepper jelly and loved it.:()

I made pepper jelly last year - it was/is fantastic! The only problem was that I used powdered pectin in a recipe that called for liquid pectin. I didn't realize there was a difference, so it didn't turn out very jelly-y - it was more of a honeyish consistency. :oops: Still tastes great, though!

Outstanding.

Experimenting with new strains and varieties each year is a treat with peppers.

So many variables in getting the heat desired and the possibilities on yields seem endless.

Can you give me your recipe and how you go about pickling the peppers? I need to do something with mine once I'm done with salsa.

Is that a brandywine there? This was my first year with them, and I'm very impressed with size and taste! Maybe my favorite tomato ever.
